
Laura together with partner, Rory Gartlan, run artisan fermentation business, Bia Cultures, which specialises in the production of small-batch raw, unpasturised fermented foods.
Their product range – on sale at Matilda’s in Carrickmacross; Crafty Coffee and 2 West Street in Castleblayney; and Bee Healthy in Monaghan Town – includes probiotic kimchi, sauerkraut and fermented lemons, as well as lesser-known ferments such as curtidos, a vibrant, raw Salvadorian-inspired condiment. Born of a commitment to using seasonal Irish produce, Bia Cultures’ creations often diverge from conventional recipes.
Originally from Italy, Laura has worked extensively in the food and hospitality industry, from Michelin-starred kitchens to organic farms.
“Our goal is to make food that’s deeply connected to the place it comes from,” said Laura. “When we choose Irish vegetables and work with local farmers, we’re not just creating better-tasting ferments, we’re contributing to a healthier, more self-sufficient food system.”
Laura has hosted fermentation workshops all over Ireland, including at IMMA and the Ballymaloe Food Festival. Later this year, Bia Cultures will be representing Ireland at the International Slow Food Festival ‘Terra Madre’ in Italy.
An increased interest in gut health and the microbiome has led to an explosion of interest in all-things fermented. Laura and Rory take this a step further by using only what’s in-season and available locally, with a commitment, too, to using every part of the vegetable and minimising food waste.
Fermentation workshops take place in their Ballybay Food Hub base. As well as making your own dishes, you will learn more generally the science of preservation and how to incorporate fermented vegetables into your everyday diet. There will also be ample opportunity to taste the various creations!
All materials and class handouts are provided, and you will bring home a jar of your own fermented goodness.
With a strong agri-food background, it’s little wonder Monaghan is emerging as a destination for food experiences. From fine dining to food trucks, famers markets to craft cocktails, there is something to whet all appetites.
Unique Monaghan food experiences include gin tasting and cocktail-making the award-winning Andy’s Bar & Restaurant in Monaghan Town, led by Ireland’s foremost gin expert, Kevin Redmond; and a diverse range of food-based courses, from mushroom cultivation to sourdough bread-baking at Síolta Chroí regenerative farm.
Bia Cultures have several workshops coming up around the county, including at the ‘Nurture in Nature’ Festival in Castleblayney on 21st August, and another at Síolta Chroí on 5th September. Private bookings (minimum group size of 5) are also very welcome, with classes held at the Ballybay Food Hub.
